Potato Pancake is a delicious snack. It can be made easily. You can prepare these pancakes on fasting days as well. they are filling for your child and the taste will linger for long too.

1 cup buckwheat flour or kuttu ka atta, 2 tablespoon yogurt/dahi, ½ medium or 1 small potato boiled and grated, ½ teaspoon of rock salt or sendha namak, 1 cup of water, oil to shallow fry the pancakes
1. Take buckwheat flour (kuttu ka atta), yogurt, potato, and salt in a bowl.
2. Give it a whisk and add water to prepare a smooth batter. Keep it aside for 10 minutes.
3. Heat the non stick flat pan (Tawa) and glaze it with 1/4 teaspoon of clarified butter (ghee) or oil. Take 1/3 cup of the prepared batter in a ladle and pour it on to the pan. As soon as you pour it, quickly spread the batter with ladle by rotating and expanding. it outward, till all the batter gets evenly distributed. Leave it till the edges start to turn golden in color.
4. Flip and cook on other side till it turns golden brown.
Tasty pancakes are ready to be served with spicy potatoes or yogurt.
