Vegetable Cakes are rich in carbohydrates and proteins. They are very healthy for your kid and make a great snack, especially for the evenings and are a good way to feed some veggies to your child.

½ cup milk, 250 gm flour, 1/4 tsp mustard, salt and pepper to taste, shredded vegetables(peas, carrots, sweet corn, baby corn, beans), 1/4 cup cheese
1. In a medium bowl, stir together cheese, flour, baking powder, mustard, salt and pepper.
2. Beat in eggs until well blended. Stir all shredded vegetables into the batter.
3. Heat skillet or griddle over medium-high heat (350 degrees in an electric skillet).
4. Lightly spray or oil with cooking spray. For each vegetable cake, pour 1/3 cup batter onto hot skillet or griddle.
5. Cook on both sides until golden brown. Serve warm.
Serve this healthy cake to your little one today.
