Vegetables in Coconut Curry

A must try comforting and without fail recipe is here for you. Adding veggies into it will not only make this dish a colourful one but full of nutrients. Coconut milk is high in magnesium and helps to strengthen bones. Veggies are rich in potassium, dietary fiber, folate,vitamin A, and vitamin C.

Ingredients to make Vegetables in Coconut Curry:

1 chopped onion, 3 cloves garlic, 1 tbsp fresh ginger (minced), 1 green chili (seeded), 1 tbsp vegetable oil, ½ tsp turmeric powder, ½ tsp. ground coriander, 1 tsp cumin, 1 tsp curry powder, ½ chopped cauliflower, 1 cup green beans, 1 sliced carrot, 1 yellow or green zucchini (sliced),1 cup coconut milk, and salt to taste

Steps to make Vegetables in Coconut Curry:

1. Combine onion, garlic, ginger, and green chili in the mixer and blend it to smooth paste.

2. Heat the oil in a large skillet and add the above prepared onion mixture. Saute it for 1-2 minutes on the medium flame by stirring it in between. Then add dry spices like turmeric, coriander, cumin, and curry powder and fry for one more minute.

3. Add all the veggies like chopped cauliflower, green beans, carrot, zucchini along with the coconut milk. Mix it well. Add salt as per your taste.

4. Cover it with lid and cook the vegetables on medium-low heat for at least 20 minutes. Make sure the veggies get cooked well and become tender.

Serve the delicious curry to your kiddo with rice. Relish it!
